Easy Toasted Muesli

Ingredients

  • 4 Cups Rolled Oats, 400 grams

  • 1 Cup Almonds & Cashews, 125 grams, halved or chopped to your liking (or other lightly flavoured nuts)

  • 1/2 Cup of Desiccated Coconut

  • 1/2 Cup of Chia Seeds

  • 1/2 teaspoon Salt

  • 1/2 Cup Honey, 125 mls

  • 2 teaspoons Vanilla Essence

  • 2 Tablespoons Coconut Oil

  • Cranberries or Raisins (Optional)

Method

  1. Preheat the Oven to 170 C

  2. Prepare a lined baking tray with baking paper

  3. In a large bowl add your dry ingredients. The rolled oats, almonds, cashews, chia seeds and salt. Mix well and set aside.

  4. In a small saucepan add the honey, vanilla essence and coconut oil and melt over a low heat until the coconut oil melts and the honey syrup just begins to boil at the edges and remove from the heat.

  5. Pour the honey mixture over your dry ingredients and stir well to coat.

  6. Spoon the rolled oats mixture onto the prepared tray and spread evenly.

  7. Bake for 8 minutes, then stir from the edges in and smooth out again, then pop on the oven for a further 8 minutes, check and stir again.

  8. Depending on the size of your tray you might want to stir one more time and cook for a further 5 minutes until all the rolled oats are nice and golden throughout.

  9. Remove from the oven and leave on the tray until completely cold

  10. If you wish to add things like raisins or cranberries you can do so now before storing, or if you prefer not to just leave them out.

  11. Add to an airtight container and store at room temperature for up to 2 weeks or freeze, can be used directly from the freezer.

  12. Serve with yoghurt or milk and fresh or frozen fruits.

  13. Enjoy!
